3 cups of Jamaican Rice

1 can of either, tinned peas or read peas. Can be pigeon peas or kidney beans, doesn’t matter.

1 uncut scotch bonnet pepper. You can also use 1 jalapeno pepper if you can’t find the other one.

3 Scallion or spring onions if that’s what you prefer to use.

1 teaspoon salt

How to Cook Jamaican Rice and Peas

Wash red peas if you are using the fresh one and then add three cups of water after to leave it soaked overnight. However, if you are using tinned peas washing and soaking is not needed to be done.

Crush 5 cloves and finely chop the garlic and mix it in seven cups of boiling water.

For fresh peas, add it directly then wait for it to boil and simmer for 45 minutes. Check if the peas are already cooked so that you can move on to the next step if you can easily crush them. Still, if you are using tinned peas, this procedure does not need to be executed.

You can then add the coconut milk, rice, salt, black pepper and thyme to the mix after the peas have been cooked.
